The practice of grazing, combining dry pastures with the varied vegetation of the Vega del Esla and the nearby mountains, gives this cheese a special bouquet.
Matured in a temperature and humidity-controlled chamber for more than three months during which the master cheesemaker pampers and cares for the cheese by turning it over and brushing it with olive oil, to keep it soft until it reaches its optimum consistency, the outstanding flavour and pleasant aroma of good sheep's cheese
